Researchers at the Harvard School of Public Health found that on average the quality of Americans’ diet improved between 2005 and 2010. However, the researchers also found that the gap in the diet quality between low-income and high-income Americans increased, and overall a decline in diet quality among the poor. Researchers attributed this difference in diet quality to differences in price and access. Low-income Americans often cannot afford the higher cost of convenient and healthy meals, and also have limited access to quality supermarkets in their neighborhoods. Frank Hu, an author on the study, stated that “without changing the food environment and food system, education alone is not going to be very effective.” What do you think?
